That’s right, I’m coming out swinging. What better way to start blogging than with the most common and loved way to deal with old bananas. I mean look at those bananas. The are done.

With these ripe bananas in hand, I decided to find a recipe and start making some bread. Like most I searched the internet for a recipe and found one called “Best Banana Bread Recipe“. With that claim in mind I decided to give it a try …. well a try in the way I give recipes a try, which is to make changes as I see fit.

The first change I made was to double the recipe, and just looked at the ingredients. Basically, I didn’t read the instruction and just combined the ingredients how I thought they should be combined. That meant combining all the “wet” ingredients first.
For me, wet ingredients mean, everything that isn’t the flour, leavening agent, or special add-ins. The additional changes I made were to change the sugar ratio from 100% white sugar to 50% white sugar and 50% brown sugar. I also added nutmeg.

While not shown, I also added walnuts and chocolate chips, because banana bread with either is a loaf of sadness. I also melted the butter before mixing it in last. Once the batter was ready I divided it between loaf pans and popped them in 350 F oven. After forgetting about them, for almost an hour, I ran to the oven a panic and pulled the loaves out.

Thankfully, there was only mild burning on the top and edges. Once they cooled and I was able to have a couple slices, I was pretty happy. I’d definitely recommend giving ti try with the changes I made:
- 100% white sugar -> 50% white + 50% brown sugar
- walnuts
- chocolate chips
- 1/2 tsp nutmeg (increase as desired)
